Mexican Noodle Soup


For the noodles

  • 1 200g package of Fideo no. 0 La Moderna®
  • 1 tomato, seeded
  • 1 garlic clove
  • 1/4 onion
  • 2 liters of chicken broth
  • 3 tablespoons of vegetable oil
  • salt and pepper to taste

For the garnish

  • 200g of pork rinds, cut into pieces
  • 2 dried pasilla chilies, fried and cut into rings
  • 1 avocado, diced
  • 200g of panela cheese, diced
  • 2 tablespoons of cream


  1. Blend the onion, garlic, and tomato into a paste, strain it and fry it in a pot with a little oil. Let it cook for a few minutes and mix occasionally.
  2. Add the chicken broth, bring to a boil, and add the noodles. Let it cook for the time indicated on the package or until the noodles are al dente, add salt to taste.
  3. Serve hot and accompany it with the garnish.
